Cauliflower as the main ingredient…say what?!

I bet you are thinking…the only time I look forward to cauliflower is when it’s smothered in an excessive amount of cheese sauce. Yeah, I know..it tastes so good but I thought I would try a healthier option – miso marinade.

This is my first vegan recipe on my blog and I must say it’s delicious.

INGREDIENTS

Miso Cauliflower

1 cauliflower head (leaves removed)
2 tablespoons of miso paste
3/4 cup of water
1 tablespoon of mirin
1/2 lime juice
2 teaspoons of brown sugar
1 tablespoon of olive oil

Slaw

1/4 red cabbage (finely sliced)
1 grated carrot
2 spring onions (finely sliced)
handful of fresh coriander
50g sunflower seeds

Slaw Dressing

1 clove of garlic (minced)
2cm fresh grated ginger
1/4 cup of tamari soy sauce
1 tablespoon of mirin
1 tablespoon of sesame oil
2 teaspoons of honey
2 tablespoons of water
1/2 lime juice
1/2 teaspoon of chilli powder

Serves 2

METHOD

  1. Pre heat the oven to 200°.
  2. Slice the cauliflower head into 4x 2cm thick steaks. Don’t worry if the edge florets break away, you can still use them.
  3. Evenly place the cauliflower steaks on a lined baking tray ready for the miso marinade.
  4. To make the miso marinade – Over a medium to high heat, in a small pot mix the miso paste, water, mirin, lime juice and brown sugar until the marinade begins to thicken. Once thickened, remove from the heat and mix through the olive oil.
  5. Now using a pastry brush, cover the miso marinade evenly over the cauliflower steaks and place in the oven for 25 minutes.To ensure the cauliflower steaks are tender, feel free to turn them over halfway through the roasting stage.
  6. While the cauliflower steaks are roasting, lets move onto the slaw.
  7. In a large salad bowl, add the finely sliced red cabbage, grated carrot, sliced spring onions, coriander and sunflower seeds. Lightly mix together.
  8. In a separate bowl – Combine all the slaw dressing ingredients together and mix well. (Taste, taste, taste! Don’t feel like you have to stick to recipes, add more chilli if you want it spicy etc.)
  9. Drizzle the dressing over the slaw before serving with the cauliflower steaks.
