Kumara, Feta and Spinach Quiche

This is a bit of an adaptation of my Mum’s recipe. Feel free to use pumpkin and silverbeet as alternative.


1 kumara (sweet potato)

1 cup of frozen spinach

1 diced onion

300g diced bacon (optional)

Handful of fresh Sage (chopped)

Olive oil

6 eggs

1 cup of milk

½ cup of plain flour

½ cup of grated cheese

150g crumbled feta cheese

Pepper to season



Pre heat the oven to 180­° on fan bake. Lightly spray a dish of your liking (I use one that is around 20cm)

Bring a pot of salted water to the boil. Peel and chop the kumara into 2cm pieces, then par boil the kumara. When ready, remove from the heat and add the frozen spinach in with the kumara for 5 minutes while it thaws out.

During this time, dice the onion, sage and bacon (optional) and cook in a pan with a glug of olive oil. Once the sage and onion is aromatic remove from the heat and cool.

In a bowl, whisk the eggs, milk and flour together. Then add the grated cheese and feta. Mix.

Drain the kumara and spinach. Then evenly place on the bottom of the dish and season with salt and pepper. Add the next layer of onions, sage and bacon. Finally pour the egg, milk and cheese mixture over the ingredients. Give a brief mix around of the egg mixture to ensure that it covers all the nooks and crannies.

Then cook in the oven for 35-40mins.
